Cool, autumn days call for some spice! I published a weekend poll and decided to let my fans tell me what to prepare this weekend.
The winner: Spicy Miso Tonkotsu!
I prefer to use awase miso, as a way of getting the best of both worlds: the earthiness of red miso, and the sweet, mellow flavors of white. As for the spice-factor I used a soy chili paste. It turned out a bit more spicier than I had intended, but I still loved it. There was definite heat, without being so spicy, that you could not savor the broth’s others flavors.
Chili pepper, miso, ginger, and pork with a slight hint of sweetness, I was very proud of my bowl.
The colors of autumn are well-represented within this bowl.💖🍁🍂🍃
